Hakata ramen and Hakata gyoza are the two dishes most associated with Fukuoka, and for good reason. The tonkotsu broth tradition runs deep here, and the gyoza, thinner and crispier than the Chinese-style original, is practically its own food group locally. The restaurants that do both best tend to be small enough that a phone call is the only way to guarantee a seat.

Menya Gaga Tenjin

Imaizumi, Chuo-ku

Seven minutes on foot from Nishitetsu Fukuoka Station, in the Imaizumi area just south of central Tenjin. Menya Gaga opened in August 2022 as the Tenjin branch of a ramen shop with a flagship location elsewhere in the city. The broth is tonkotsu, simmered for over twenty-one hours to strip out the heavier pork-bone smell that some diners find off-putting, finished with a proprietary spicy sauce and house-made noodles. Twenty-five seats across counter and table, with a private room for up to six available on a 45-minute booking, free for families with young children outside of busy hours. Multilingual menus in English, Chinese, and Korean. Closes early when the broth runs out. Irregular closing days.

Hakata Gyoza Yuushin

Sumiyoshi, Hakata-ku

A short walk from Canal City Hakata, in the Sumiyoshi neighborhood near Kushida Shrine. Yuushin has built its reputation around a specific style of Hakata gyoza. A crisp, golden exterior with wings of pan-fried batter extending beyond the dumpling itself, paired with a chewy wrapper and a filling the restaurant makes entirely in-house. Thirty-eight seats across counter, table, and tatami, with two private rooms for up to four guests. The drink list runs deeper than most gyoza restaurants, with a sake selection the staff have clearly put thought into. Wheelchair accessible. Irregular closing days, announced on the restaurant's website.

Hitokuchi Gyoza Tenya

Kurume, Fukuoka

Nine minutes on foot from Nishitetsu Kurume Station, about forty minutes south of central Fukuoka by train. Tenya has been selected for Tabelog's Top 100 Gyoza list in 2024 and carries a score of 3.72, a strong showing for a restaurant outside the city center. Eighteen seats, no private rooms, a tight and unpretentious space that focuses entirely on the food. The name translates to bite-sized gyoza, and the dumplings are smaller and more delicate than the standard Hakata style, designed to be eaten in one motion. Phone reservations are only accepted starting at 4pm. Cash and card accepted, no electronic payment. Closed Thursdays, with occasional Tuesday closures.

Every restaurant on this list takes reservations by phone, in Japanese. Tenya only accepts calls starting at 4pm; the other two are more flexible, though calling during afternoon hours between 2pm and 5pm tends to work best in general.
